I like to think of fat tissue as a savings account for energy (that requires a lot signatures to access), and glycogen stores as a checking account with a little bit of money that is easy to access and can be used on the spot.
Lipogenesis is the metabolic process that allows our bodies to convert excess energy (carbs) into fatty acids so they can then be stored as fat in adipose tissue. It is a incredibly well conserved pathway throughout evolution that allowed our ancestors to store extra energy during times of abundance for later use during times of scarcity.
